Something that many of you may already know is that buckwheat flour is a perennial herbaceous plant, and it completes its biological cycle in ninety to one hundred and twenty days. The plant does not belong to the Gramineae family and is therefore not a cereal! In the kitchen, it is consumed in the form of flour to prepare the famous Valtellina pizzoccheri, and it is also used to make delicious cakes and cookies, of course.

Ingredients for Making Vegan Gluten-Free Cookies
- 1/4 cup water
- 1/4 cup vegetable oil
- 1/3 cup sugar
- 1 1/4 cups rice flour
- 3/4 cup buckwheat flour
- 1 teaspoon baking powder
- 1 orange zest
- 1 pinch ground cinnamon
- 1/2 cup raisins

Preparation of Vegan Gluten-Free Cookies
To start, soak the raisins in water, or you can use rum or other liquor if the cookies are not intended for children
Combine water and oil and add the sugar.
Mix the two flours with the baking powder, add the grated orange peel, add the cinnamon and finally the raisins. Mix all the ingredients, if needed you can put it in the fridge for a few minutes.
Make balls and flatten them, naturally, you already know that working with buckwheat is really difficult, but not impossible. I used 2 sheets of parchment paper with the dough in between and rolled it out with a rolling pin.

Bake the cookies in the oven for 20 minutes at 375°F
