Sweet Potato Sticks

The sweet potato sticks are a tasty, light, and especially healthy side dish. Sweet potatoes provide few calories, are rich in fiber, vitamins, and are not nightshades. They are a very versatile food as they can be used for both savory and sweet recipes. This recipe is simply prepared with aromatic herbs and rice starch which helps to make the sweet potatoes crispy and dry. By using certified gluten-free ingredients, the sweet potato sticks will also be suitable for your celiac guests.

Ingredients

  • 2.2 lbs sweet potatoes (or yam)
  • 3 tablespoons rice starch (gluten-free)
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon thyme
  • 1 teaspoon sweet paprika
  • 1 teaspoon spicy paprika
  • 1/3 teaspoon garlic powder
  • salt
  • pepper

  • 1 Peeler
  • 1 Baking Tray
  • 1 Knife

Steps

  • Peel the potatoes and rinse them under running water. Dry them well with kitchen paper.

    Cut them into slices 1/4 inch thick. For each slice, cut into 1/4 inch sticks.

    Gather the potatoes in a large bowl. Add the rice starch, spices, and salt.

    Mix well and finally add half of the oil.

    Arrange all the sticks well spaced on a baking tray lined with parchment paper. Oil with the remaining oil.

    Bake in a fan oven at 375°F for about 20-25 minutes.

    Remove from the oven and serve immediately.
