Artichokes Stuffed with Sausage and Scamorza

Artichokes Stuffed with Sausage and Scamorza

Ingredients for Artichokes Stuffed with Sausage and Scamorza

  • 4 Roman artichokes
  • 2 sausages
  • 1 shallot
  • 3 1/2 oz grated Parmesan cheese
  • 3 1/2 oz smoked scamorza cheese
  • 2 pinches salt
  • 1 lemon
  • to taste black pepper (ground)
  • 1 tbsp extra virgin olive oil
  • to taste chopped parsley

  • 1 Pan
  • 1 Knife paring

Steps for Artichokes Stuffed with Sausage and Scamorza

  • With a small curved knife remove the tough outer leaves and cut the stem to 1.5 in.

  • Cut the tips off the artichokes and open them in the center, removing the tough inner part, and remove the choke if present.

  • Rub the artichokes with lemon juice and place them upside down in a basket for steam cooking with 2 fingers of water underneath.

  • Steam cook the artichokes for at least 15 minutes, if you have a microwave with a steamer it will only take 7 minutes.

  • Meanwhile, finely chop a shallot and sauté it in a pan with a drizzle of extra virgin olive oil.

  • Remove the casing from the sausages and crumble them into the pan with the shallot, cooking them for 6 or 7 minutes.

    Let them cool slightly.

  • Now that the artichokes are cooked, remove the stem, chop it, and add it to the pan with the sausages, mix, and add the grated cheese, a pinch of salt, and pepper.

  • Fill the artichokes with the sausage and grated cheese mixture, applying slight pressure to the center, and place them in an oven dish drizzled with extra virgin olive oil.

  • Cook the Artichokes Stuffed with Sausage and Scamorza for 15 minutes in a preheated oven at 392°F.

    Now add the smoked scamorza cheese on top and bake again for another 5 minutes until it melts.

  • Sprinkle with fresh chopped parsley and serve.

Variations and Tips

For a more indulgent filling, you can add diced scamorza cheese inside.

You can also steam the artichokes in an electric steamer or microwave.

Once stuffed, the Artichokes Stuffed with Sausage and Scamorza can be cooked in an air fryer at 338°F for 12 minutes, then add the scamorza on top and finish cooking for another 4 minutes.

If you prefer, you can use fresh mint instead of parsley.
