Risotto with Brie and Saffron

Ingredients for Risotto with Brie and Saffron

  • 1.5 cups Carnaroli rice
  • 7 oz brie
  • 1 shallot
  • 1 packet saffron
  • 1/4 cup dry white wine
  • vegetable broth
  • extra virgin olive oil
  • salt
  • black pepper

Preparation of Risotto with Brie and Saffron

  • Peel the shallot, chop it finely and sauté it for a couple of minutes in a large pan with a few tablespoons of oil.

  • Add the rice, toast it for a minute, then drizzle it with the white wine and let it evaporate.

  • Once the wine has evaporated, cover the rice with boiling broth and continue cooking, adding more broth each time the previous one is absorbed. Stir occasionally.

  • In the meantime, dissolve the saffron in a small bowl with some hot broth and cut the brie into pieces, removing the rind.

  • A couple of minutes before the end of cooking, pour the saffron mixture into the risotto and stir.

  • Once cooked, turn off the heat and add the brie cheese. Stir carefully until it is perfectly melted, then let it rest for a few minutes.

  • Distribute the risotto with brie and saffron on individual plates, sprinkle it with freshly ground black pepper and serve immediately. Enjoy! Paola
