Savory Parmesan biscuits with herbs, ideal to accompany Gorgonzola or Taleggio cheese and with a good Prosecco, we have everything for a quick aperitif. An idea for when unexpected guests arrive and you want something delicious, but there’s nothing fancy in the pantry. The ingredients to prepare the savory Parmesan biscuits with herbs are easy to find in any home: flour, eggs, Parmesan… herbs. Today, I wanted to try preparing the savory biscuits with buckwheat flour, but you can also use all-purpose flour or cornflour if you prefer. For the herbs, you can use finely chopped dry rosemary, basil, or chives, whatever you have at home naturally. Even grated lemon peel could work just fine.

  • 6 oz Buckwheat flour
  • 3 oz butter
  • 1 egg
  • 1 tbsp herbs
  • 3 oz grated Parmesan cheese
  • to taste salt
  • to taste pepper

Preparation of savory Parmesan biscuits with herbs

  • I always recommend preparing all the ingredients in advance and keeping them in sight, it’s the only way not to forget anything.

  • As a first step, put the buckwheat flour and butter in the stand mixer, start combining the two ingredients. In the next step, add the salt, herbs, and egg.

  • Add the Parmesan and when it reaches a fairly solid consistency, remove it from the stand mixer and wrap it in parchment paper. Let it rest in the fridge for half an hour.

  • After thirty minutes, roll it out between two sheets of parchment paper with the rolling pin.

  • Use the small, flower-shaped cookie cutter to prepare the biscuits.

  • Place the biscuits on a baking tray with parchment paper and bake at 338°F for twenty minutes.

  • Here are the biscuits with Parmesan and herbs ready.

  • With these savory biscuits, you can accompany raw vegetables in pinzimonio or with some fresh, soft cheese.
