Pasta with cherry tomatoes, speck, and stracciatella, a recipe as simple as it is delicious for an original and flavorful first course.
This dish is perfect for those who love contrasts between sweet, savory, and creamy flavors: it combines the sweetness and freshness of cherry tomatoes, the savoriness of speck, and the soft creaminess of stracciatella.
It is a dish that can be served both in informal occasions and for a more refined lunch, thanks to its simplicity and the richness of flavors it offers.
Stracciatella is a fresh cheese from Puglia, made from mozzarella strips soaked in cream. Its creamy texture and delicate flavor make it a versatile ingredient in the kitchen. Added at the last moment, the stracciatella mixes with the heat of the pasta, forming a cream that enriches the dish without overshadowing other flavors.
You can use different varieties of cherry tomatoes like cherry, date, or yellow tomatoes. Cherry tomatoes are sweet and slightly acidic, while date tomatoes are sweeter and juicier. Yellow cherry tomatoes, on the other hand, have a more delicate and fruity flavor.
In conclusion, pasta with cherry tomatoes, speck, and stracciatella is a dish that impresses with its simplicity and elegance. It is ideal for a summer lunch or a dinner with friends, where you want to amaze with a dish that harmoniously combines tradition and creativity.

FAQ (Frequently Asked Questions)
Can I cook the cherry tomatoes in a conventional oven?
Of course, at 428°F fan mode for about half an hour.
Can I use burrata instead of stracciatella?
Yes, but I recommend blending it slightly with an immersion blender.
Can I add some spice?
Absolutely! You can either use chili peppers to season the cherry tomatoes or use a chili oil raw before serving the dishes.
Can you suggest some pairings?
This dish pairs well with a fresh and aromatic white wine, such as a Vermentino or a Sauvignon Blanc, which enhance the sweetness of the cherry tomatoes and the creaminess of the stracciatella. If you prefer a rosé, a Chiaretto from the Lake Garda area could be an excellent choice.
