Ingredients
- 14 seedless grapes
- 2.8 oz spreadable goat cheese
- 3.2 oz Gorgonzola
- 2.8 oz grated Parmesan cheese
- as needed brandy if necessary to mix (max 0.2 oz)
- 1.8 oz crushed hazelnuts
- 1.8 oz crushed almonds

How to Prepare Grape Balls with Goat Cheese and Gorgonzola
First, organize your workspace with all the ingredients, already measured. This way, you will have everything at hand.
Place the goat cheese together with the Gorgonzola in a bowl, and mash both with a fork. If the resulting mixture is not pliable enough, add a dash of brandy.
At this point, add the grated Parmesan cheese, and mix until you get a homogeneous mixture, although it will naturally remain quite sticky.
After washing and drying the grapes, use a teaspoon to take a portion of the mixture, place a grape on top, and cover with a little more of the mixture.
Now form a ball with your hands and immediately roll it in the crushed hazelnuts, alternating with the almonds. If you don’t want to get your hands too dirty, you can use two teaspoons to shape a kind of ball, giving it shape only after rolling it in the nuts.
Gradually place them on a plate and skewer them with a toothpick, making them easier to eat.
Serve your Grape Balls with Goat Cheese, Gorgonzola, and Nuts, only after letting them rest in the refrigerator for at least an hour, so the cheese can firm up a bit.
Tips and Variations
The grape and cheese balls can be kept in the refrigerator for at least a day, but they should be covered.
If you don’t like Gorgonzola, you can make them with only goat cheese, and in this case, you won’t need to add brandy.
As for the nuts, choose the ones you prefer, as the result will still be fresh and delicious.
