Lentils for New Year

Ingredients

  • 16.9 oz canned lentils (2 cans)
  • 1 carrot
  • 1 potato
  • 1/4 white onion
  • 1 bouillon cube
  • as needed water
  • as needed black pepper
  • Half teaspoon tomato paste
  • 2 tablespoons extra virgin olive oil

Steps

  • Let’s start by preparing the vegetables: peel and cut the carrot and potato into small dice and finely chop the onion.

    Wash the lentils thoroughly under running water, drain them, and set aside.

  • In a large pot, heat the extra virgin olive oil. Add the vegetables and tomato paste, stir, and let them flavor for a few minutes.

  • Add the lentils, the bouillon cube and add water to cover all ingredients.

  • Stir and cook over medium heat with a lid for about 20 minutes.

  • Taste and adjust with salt and pepper. Our New Year’s lentils are ready.

  • Let them cool slightly, then serve them in broad and low glasses or individual bowls. Happy New Year everyone!

Storage and tips …

Store in the fridge covered with plastic wrap.

Consume within 2 days.
