Tips and Variations
I suggest letting the soup cool down for a few minutes before adding the sprouts. It is also excellent served at room temperature.
You can use sprouts of radish (as I used) or other types (alfalfa, pak choi, etc.) according to your taste. You can buy them packaged or grow them at home with a sprouter, so they will be fresher.
You can enrich the cream with liquid cream, sour cream, or Greek yogurt.
Out of season, you can use frozen peas.
