Mandarin Mushrooms, which I also call Christmas treats because mandarins are in full production in December. It’s true that you can always find mandarins in the market, but I am talking about seasonality and territory. So, I want to be a bit parochial and tell you that the citrus fruits from the south, and in my case Sicily, are produced during the Christmas period. I have a memory of Epiphany: in the Befana’s stocking, my mom used to put mandarins along with sweets and dried fruits, we are talking about 1968. To prepare the Mandarin Mushrooms, you should use organic mandarins, as the peel is also blended. Ingredients for Preparing Mandarin Mushrooms

  • 4 mandarins
  • 1 3/4 cups all-purpose flour
  • 2 eggs
  • 6.3 tbsp vegetable oil
  • 7/8 cup sugar
  • 1 Golden apple
  • 1 packet baking powder

Tools for Preparing Mandarin Mushrooms

  • Blender
  • Stand Mixer
  • Ladle
  • Muffin Tray
  • Muffin Liners

Preparation of Mandarin Mushrooms

  • Wash the mandarins, cut them in half, and remove the seeds. Use them with the peel, so make sure they are certified organic.

  • Use a blender or, even better, a homogenizer to puree the mandarins.

  • Once the first step is done, set it aside.

  • Whip the eggs with the sugar in the stand mixer and add the oil

  • and the mandarin puree

  • add the flour with baking powder and the peeled apple cut into small pieces.

  • Prepare the paper liners in the muffin tray.

  • With a ladle, fill the liners with the mandarin mushroom mixture.

  • Bake for 20 minutes at 356°F

  • Ready!

  • Ready and wonderfully fragrant, the mandarin mushrooms.

  • Can you make mandarin mushrooms using oranges?

    Yes, of course, but the weight should be for 4 mandarins, approximately 200 g, and not 4 oranges.
