Ingredients

  • 1 yellow bell pepper
  • 1 red bell pepper
  • 10 leaves basil
  • 1/2 spring onion
  • 3 tbsps extra virgin olive oil
  • 1/3 lemon zest
  • salt
  • 1.1 lbs pasta
  • 7.1 oz tuna in oil
  • 10 cherry tomatoes
  • basil
  • 1.1 oz extra virgin olive oil
  • salt

Steps

  • Wash and dry the bell peppers well with paper towels. Cut them in half, remove the stem, seeds, and internal filaments. Cut the peppers into pieces about 1 inch.

    In a pan, add the oil and the spring onion without chopping it. Heat on low flame and gently brown the spring onion.

    After 5 minutes, add the bell peppers. Remove the spring onion and cook on medium heat for 10 minutes. Adjust the salt. Remove from the heat and let cool.

    Toast the almonds in a pan or under the grill and let them cool. Transfer the bell peppers and almonds to the blender jug. Add the basil and grated lemon zest. Blend with an immersion blender.

    Cook the pasta in abundant salted water. Drain the tuna and set it aside.

    Wash the cherry tomatoes and cut them in half. Gather them in a bowl and season with oil, salt, lemon zest, and basil.

    Drain the pasta and cool it under running water. Place the pasta in a bowl, add the bell pepper pesto, and mix. Add the tuna and finally the cherry tomatoes.

    Serve immediately or store in the refrigerator for up to 2 days.
