- 2.2 lbs Anchovies
- 1.25 cups Flour
- to taste Peanut oil
- 1.25 cups White Wine Vinegar
- 1 clove Garlic
- 1 bunch Parsley
- 1 sprig Rosemary
- one third Lemon zest
- 1 Onion

Preparation
Clean the anchovies by removing the head and guts, wash them and dry them well.
Pass the anchovies in flour and fry them. Certainly, if you dry them well, they won’t splatter.
Boil the vinegar for 8 minutes with all the herbs.
Place the anchovies in a container and pour the still hot vinegar over them.
The fried anchovies with marinade are ready!
