The creamy bars with blueberries and quark are a delicious idea perfect for snack and breakfast. They are really easy to make: both the dough and the filling cream are prepared in less than 10 minutes without using electric mixers or stand mixers. You’ll just need to wait 40 minutes for baking, and then you can enjoy healthy, delicious bars characterized by a crunchy crumble and a soft, creamy filling that will delight your taste buds!

The process to prepare them is very simple: first, combine the oat flour with the butter, erythritol, sugar, and egg in a bowl. Knead with your hands until you get a homogeneous dough. Meanwhile, in another bowl, mix the quark with Greek yogurt, agave syrup, the egg, grated lemon zest, and finally the blueberries. Pour a little more than half of the dough into a rectangular mold lined with parchment paper and flatten with your hands. Pour the blueberry cream over its surface, finally distributing the remaining dough over the cream like crumbs, and sprinkle broken walnuts that will add crunch to our bars. Bake in the oven at 350°F for 40 minutes, and once cool, cut our cake into bars ready to be enjoyed.

We made them using healthy ingredients and trying to avoid using refined sugars. In fact, we replaced sugar with erythritol in the dough, and used agave syrup in the filling. Naturally, if you prefer, you can use granulated sugar or another type of sweetener to your liking, but the version we propose will guarantee you tasty and sweet treats to the right point. For the filling, as we also point out below in the notes, you can replace the quark with ricotta, Philadelphia, or yogurt, and you can also replace the blueberries with the fruit you prefer such as berries like raspberries or strawberries, but also apples, pears, peaches, depending on the season in which you prepare them or your preferences.

  • Prepare the creamy bars with blueberries and quark by first pouring the flour into a bowl and adding the softened butter and erythritol or sugar. Work with your hands to obtain a sandy mixture. Add the egg and continue kneading until you obtain a homogeneous but still sticky dough.

  • Let the dough rest while you prepare the cream with quark and blueberries: pour the quark into a bowl and add the Greek yogurt.

  • Add the egg, agave syrup or honey, a tablespoon of oat flour, and grated lemon zest, and mix with a whisk until obtaining a cream.

    You can use vegetable butter or alternatively oil, reducing the amount compared to that provided for butter by about 20 grams. For the filling, you can use lactose-free yogurt instead of quark or soy yogurt.
