Today I prepared these Pumpkin Flower and Potato Fritters to serve after pasta. They are ready in a few minutes by adding instant yeast to the batter to make them fluffier. Great as an appetizer, eaten on their own, with cold cuts and cheeses, or also included in a mixed fry or simply as I did for a second course.

- 2 eggs
- 1 3/4 cups all-purpose flour
- 7 tbsp water
- 3 tbsp sunflower seed oil
- 9 pumpkin flowers
- 1 potato (small (50 g))
- to taste chives (2 sprigs)
- 1 tsp table salt
- 1 tsp instant yeast for savory preparations

Steps for Pumpkin Flower and Potato Fritters
I love these fritters, even though I should avoid fried foods, but every once in a while I indulge. They are amazing, one leads to another and they are easy to make. Today I added a potato, but you can substitute it with a zucchini or use neither potato nor zucchini. First, clean the flowers by removing the pistil and stem. Don’t worry if the flowers break, they will be cut anyway.
In a bowl, lightly beat the two eggs with a fork, add the salt, water, and oil. Mix everything together.
Add the sifted flour and instant yeast and beat very well until you get a smooth, lump-free mixture. You can also use a hand blender to speed up the process.
Take the flowers and cut them into pieces with scissors, do the same with the potato. After cutting it into thin slices, cut the slices into small pieces. Toss everything into the bowl and stir.
Heat the seed oil in a pan and when it’s very hot, use a spoon to scoop a little mixture and drop it into the oil. The fritters will puff up as they cook. Turn them occasionally until they are nicely golden on all sides.
As soon as they are golden, drain them and place them on absorbent paper, then they are ready to be served. Enjoy your meal!
