HAZELNUT BISCUIT BONES TO BITE I follow some influencers, some of whom deal with cooking and are mostly foreign because I find Italians on TV shows that I watch, on FB, in chats on Telegram and/or Whatsapp, and I am also subscribed to their newsletters, so on that social media, I prefer to read foreign recipes!
This cookie recipe I read on the profile of a well-known influencer and tried to remake it, thinking also of giving them as gifts for the upcoming End of Year festivities.
These cookies with dried fruit require very few ingredients (powdered sugar, peeled and toasted hazelnuts, egg white, and just a little bit of cocoa powder) but need some resting time, from at least one hour to a whole day.
Last night there was nothing on TV that I liked and just for a change, I decided to bake them, leaving them to rest overnight.
These hazelnut cookies known as bones to bite have a flaw: they are very pleasant to eat; it’s like they call you, enchant you, just like sirens with Ulysses, and darn it, you have to open the jar and eat another piece!!!
I set 15 minutes of preparation time because I used already peeled and toasted hazelnuts, obviously if you buy them with the skin, it requires additional time for cooking and resting!
If you want them white, omit the cocoa and use slightly less egg white, but they will still dry perfectly as we add powdered sugar for resting!

- 2 cups powdered sugar
- 5 tbsp egg whites
- 2 tbsp cocoa powder

STEPS FOR PREPARING THE HAZELNUT BISCUIT BONES TO BITE
put the hazelnuts in the bowl of the stand mixer or in a bowl of your choice.
Then add the powdered sugar and let the hazelnuts whiten, wrapping and rolling in the sugar dust.
Add the cocoa powder and then gradually the egg whites, always mixing with the paddle attachment or kneading with your hands to obtain a mixture that is then compacted between two sheets of parchment paper, flattening it with a rolling pin to the height of a hazelnut.

So most of the recipes I’ve read online, suggest from 12 to 24 hours and that’s a lot of time, other places I’ve read at least an hour …
I let it rest overnight since I made the dough at 11 PM last night because I’m a bit crazy, and baked it this morning at 8 AM.
AFTER RESTING, I cut many small squares with a knife which I then arranged on a sheet of parchment paper well spaced apart.
I set the fan oven to 338°F (170°C) and they cooked in about 10/15 minutes, as you can see above, they spread out and became a bit wonky ↑
I turned off the oven and let them cool before tasting… very good and suitable, since they keep for 20/25 days, to be packaged as gifts with a nice package for Christmas but also I THINK to be placed in small food bags and placed on the table as Christmas place cards!
