Corn Flakes Cake

Corn Flakes Cake is a delicious and simple dessert to make without flour, so it can easily be categorized as gluten-free, as you already know that corn is gluten-free. Corn flakes or corn flakes were invented by the Kellogg brothers, (hence they are named after them) who were doctors and needed to recycle stale grain; so they created this product to serve to their clinic’s patients. Of course, these products have evolved shortly after and today we all know the wide range of corn flakes. I always choose orange marmalades for my desserts and fresh oranges, I think it’s due to my Sicilian roots. Forgive me. This corn flakes cake is very similar to my ricotta cake with orange marmalade, I really like it in this version, but it can be made with any marmalade of your liking. Ingredients to prepare the Corn Flakes Cake

  • 9 oz corn flakes
  • 8 tbsp butter
  • 3/8 cup brown sugar
  • 1 egg
  • 1/2 cup almond flour
  • 1 orange zest
  • 9 oz cow ricotta
  • 8 oz orange marmalade

Tools

  • Electric whisk
  • Rolling pin
  • Baking pan 24 cm springform
  • Parchment paper
  • Bowl

Preparation of the Corn Flakes Cake

  • First, put the corn flakes in a bag and crush them with the rolling pin, collect them in a bowl, and pour the melted butter over them.

  • Prepare a springform pan with parchment paper, pour in the mixture of corn flakes and butter.

  • Level the mixture of corn flakes and butter to obtain a smooth and compact surface.

  • To prepare the cream, use the electric whisk and mix well all the ingredients; sugar, eggs, almond flour, grated orange zest, ricotta.

  • Pour the cream prepared this way over the base of corn flakes and butter.

  • Put in the oven for twenty minutes at 356°F

  • Let the corn flakes cake cool slightly and spread the orange marmalade on top! Ready, the corn flakes cake.
