Fruit Bread for Sweet and Savory Pairings

Let’s start by saying that when making and publishing this fruit bread recipe for sweet and savory pairings, I chose the wrong mold because it would have looked cuter in a loaf tin, but the small mold was already chilling in the fridge with a new spoon dessert, so I opted for a small circular springform pan.

This slightly sweet dessert can also be tasted as an appetizer along with a nice plate of cheeses and various types of honey, and I must say that being not very sweet, it is very intriguing!:

I added a mix of dried fruit that can be found at Esselunga, containing pieces of figs, apricots, cranberries, and plums, but if you prefer to use just one type of fruit, the final choice is yours.

The fruit bread also has hazelnuts and almonds in the dough, with little sugar and little flour, and it can also be served as breakfast bread, perhaps with a smear of your favorite jam.

I intentionally didn’t add powdered sugar, but if you taste it as a dessert, it’s a great idea!

Fruit Bread Recipe Ingredients

  • 2 eggs
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup flour
  • 1/2 teaspoon baking powder
  • 1 1/3 cup dried fruit (Esselunga's dried fruit mix (figs, apples, plums, cranberries, apricots))
  • 2.3 oz whole hazelnuts
  • 2.3 oz peeled almonds (Whole)

PREPARATION OF THE FRUIT BREAD RECIPE

  • In a bowl, beat the eggs with the sugar and vanilla using electric whisks until you get a light and fluffy mixture.

    Add the sifted flour with the baking powder and combine these ingredients using a spatula or by continuing to use the electric whisks at low speed.

  • Add the dried fruit mix, along with hazelnuts and almonds, mixing well and incorporating everything evenly.

  • Now bake at 340°F (170°C) in a preheated oven, cooking for about an hour, but always check times and temperatures according to your home oven.
    Once cooked, let the fruit bread cool and then serve it at breakfast.

  • If we wrap the fruit bread with dried and dried fruit in appropriate paper, we can store it in the refrigerator for 5/6 days.
