Ingredients for Leek Rolls in Sauce
With these quantities, you will have 3 rolls per person.
- 1 lb leek
- 7 oz potatoes
- 12 oz ground beef
- 1.75 oz grated Grana Padano cheese
- 14 oz tomato puree
- 3 pinches salt
- 1 pinch black pepper
- 1 pinch dried oregano
- 2 pinches thyme
- 1 clove garlic
Steps
First, clean the leeks by removing the tougher green part, the root, and the outer leaves.
Then, obtain 24 intact leaves and cook them in a pot full of water for 4 to 5 minutes.
Drain them using tongs to avoid breaking them and let them dry on a clean towel.
In the meantime, cook 200 g of potatoes (boiled or steamed) and mash them to obtain a puree.
Place the potato puree in a large bowl, add the ground beef, grated cheese, and crushed garlic clove.
Season with salt, pepper, and dry thyme, and mix very well.
On a cutting board, place 2 strips of leeks in a cross, fill the center with a generous spoonful of filling, and close into a packet leaving the closure facing down.
In a small bowl, season the tomato puree with salt, pepper, and oregano and set aside temporarily.
Heat a large high-sided pan with a little extra virgin olive oil, brown the leek rolls on both sides, turning them with a spatula or kitchen tongs.
Once browned, add the tomato puree, lower the heat, cover with a lid, and cook the rolls in the sauce for at least 20 minutes.
Serve topped with grated cheese and a drizzle of raw extra virgin olive oil.
Tips and Variations for Leek Rolls in Sauce
If you prefer, you can bake them by placing them in a baking dish, covering them with the sauce and grated cheese on top, and baking them on the middle rack at 350°F for 25/30 minutes.
Want a richer filling? Chop the middle part of the leek, brown it in a pan, and add it to the potato and ground meat filling.
Want to make them vegetarian? Replace the ground meat with 250 g of boiled or canned and mashed chickpeas and mix with the mashed potato.
