- 1/2 cantaloupe melon
- 1 red spring onion
- 10 cherry tomatoes
- 1 bull's horn pepper
- 4 cubes ice
- 2 slices stale bread
- 1 tablespoon extra virgin olive oil
- Half tablespoon apple cider vinegar
- to taste salt
- to taste black pepper

Melon and Bell Pepper Gazpacho Recipe
Start preparing the melon and bell pepper gazpacho by washing and cleaning all the vegetables.
Cut the cherry tomatoes in half and the spring onion into 4-6 pieces.
Remove the seeds and white filaments from the pepper and cut it into strips.
Cut the melon in half and remove the skin and central seeds.
Slice it and cut it into cubes.
Place the melon in the blender jar.Add the sliced pepper, cherry tomatoes, and chopped spring onion.
Add two slices of stale bread cut into chunks.Add the olive oil and vinegar and continue with salt and black pepper.
Place 3-4 ice cubes in the blender.
Blend at maximum speed for 3-5 minutes or until you get a smooth and not too thick cream.
Transfer the melon and cucumber gazpacho to plates, add a drizzle of raw oil, and garnish with a basil sprig if desired.
