Ingredients for Chicken Salad with Ham and Celery

  • 1/2 free-range chicken breast
  • 1 carrot
  • 1 onion
  • 3.5 oz ham
  • 2.8 oz Asiago cheese
  • 2.8 oz ham
  • 4 stalks celery
  • 6 walnuts
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Steps

  • First, place the carrot, onion, and celery cut into pieces in the pressure cooker (or a pot) with 5 glasses of water. Add the whole chicken breast and bring to a boil: at the whistle, continue cooking for 15 – 20 minutes.

  • If using a regular pot, it takes about 30 – 40 minutes.

  • Once cooked, let it cool and then cut it into pieces, shredding it. Strain the broth and set it aside. I pour it into glass jars and store them in the freezer: I take them out when needed.

  • Meanwhile, dice the cooked ham and the Asiago (or similar cheese, such as fontina, toma, feta ..); wash the celery, remove the strings, and cut it into thin slices.

  • Take a serving dish with high edges, add the chicken, diced ham, cheese, and celery: season with extra virgin olive oil, salt, and pepper. Finally, chop the walnuts and place them on the salad, mixing gently.
