Tips and Variations
You can use smoked salmon (raw or cooked) or fresh salmon, cut into pieces and sautéed in a pan for a few minutes.
Squeeze the spinach well before using them, to prevent them from releasing too much liquid onto the pastry. The breadcrumbs help absorb excess moisture.
You can add a tablespoon of grated Parmesan cheese to the filling.
If you don’t want to use the egg, you can brush with milk or melted butter.
