Tips and Variations
The shortcrust pastry made with this recipe (which is Montersino’s) is ideal for these cookies because it helps them maintain their shape during baking. It is important to let the dough cool well before using it, otherwise, it will be too soft to roll out easily.
If you prepare 2-3 trays of cookies and do not bake them all together, keep them in the refrigerator before baking (do not leave them too long at room temperature).
You can vary the decoration as you like, for example by using white chocolate instead of dark chocolate, or adding food coloring to the white icing.
