Tofu with Sweet Potato
- Half sweet potato (or American potato) (SWEET POTATO – about 6 oz)
- 4.6 oz tofu
- 1 fresh clementine (optional)
- to taste breadcrumbs (season with a tablespoon of curry or paprika and sesame seeds)
- to taste soy sauce
- to taste extra virgin olive oil
Substitute clementines with:
– cooked chickpeas
– sliced red onion
– sun-dried tomatoes (to be added at the end of cooking)

Tofu with Sweet Potato
Cut the sweet potato (with or without skin) and the tofu (dried) into regular cubes.Add the segments of a clementine (optional).
Season (I use soy sauce, curry, breadcrumbs, and extra virgin olive oil) and mix.Pour into a baking tray and form a single layer.
COOK:
– in an air fryer at 356°F for 6 minutes
– in a fan oven at 338°F for about 20 minutes, stir halfway through cooking
– in a pan for 10-15 minutes, stirring as needed.
It’s best to enjoy sweet potatoes with tofu immediately.
STORE tofu with sweet potato
Store tofu with sweet potato in an airtight container in the refrigerator and consume within 2 days.
To reheat, use the oven (5 minutes at 356°F), air fryer (2 minutes at 320°F), a pan with a drizzle of oil (2 minutes), or the microwave (1 minute).
