Ingredients for Crispy Air Fryer Zucchini

  • 2 zucchini (medium size)
  • 3 tablespoons seasoned breadcrumbs
  • 2 tablespoons extra virgin olive oil
  • 1 pinch fine salt
  • to taste black peppercorns (freshly ground)

Preparation of Crispy Air Fryer Zucchini

  • Remove the zucchini ends, wash them and dry them well, then cut them into thin slices.

  • Place the zucchini in a bowl, season with oil, salt, and pepper, and mix well.

  • Add the seasoned breadcrumbs to the bowl and mix so that the zucchini are completely coated.

  • Preheat the air fryer to 392°F (200°C), once ready, place the parchment paper in the basket and distribute the breaded zucchini slices on top, making sure they are not too overlapped (if necessary, make two batches) and cook for 25 minutes, turning each slice halfway through cooking.

  • Once the zucchini are cooked, remove the basket and let it cool in the open air so that they stay crispy; then you can enjoy them in all their goodness!

Variations

To give the zucchini a crunchier touch, you can replace 1 tablespoon of seasoned breadcrumbs with 1 tablespoon of cornmeal.
