I love salads. I enjoy playing with ingredients and changing them based on my mood (yes 😊), but also depending on what’s in my pantry or fridge.

The salad with lamb’s lettuce, cherry tomatoes, olives, corn, and cheese can be served as a side dish or as a main course (to keep it light, maybe enriched with other ingredients like tuna, mackerel, small mozzarella balls, or other vegetables) or as an appetizer in individual portions for a buffet.

Put it in an airtight container without dressing it, and it will be perfect to take to the office or the beach. Needless to say, it’s very easy to prepare: in fact, it’s not a real recipe, but a fun and colorful way to combine these foods.

Ingredients for Lamb’s Lettuce, Cherry Tomatoes, Olives, and Cheese Salad

  • 1.76 oz lamb's lettuce (songino)
  • to taste cherry tomatoes (amount as desired)
  • to taste black olives
  • to taste green olives

Steps

  • First, wash the lamb’s lettuce (or songino), gently pat it dry with a cloth, also wash the cherry tomatoes, dry them, and cut them in half or into wedges; place them in a bowl.

  • Cut the Asiago (or another similar cheese like Feta or a Piedmontese toma) into cubes and add it to the bowl along with the corn, green and black olives. Dress with extra virgin olive oil and salt, and finish with Grana Padano flakes and sesame seeds.
