Soft Lemon Cookies

To prepare this dough, I used the Bimby, but you can use a stand mixer or knead by hand.

Ingredients

  • 2 cups flour
  • 3 1/2 tbsp butter (soft)
  • 1 egg
  • 1/3 cup sugar
  • 1 pinch salt
  • 1 lemon (zest + juice)
  • Half packet baking powder
  • to taste vanilla powdered sugar

Tools

  • Grater
  • Knife
  • Cutting Board
  • Citrus Juicer
  • Stand Mixer

Steps

  • Wash the lemon under running water, dry it and grate the zest, cut it in half and squeeze it.

  • Place in the stand mixer or Bimby cup the butter, egg, sugar, the zest of the organic lemon and mix for about 2 minutes.

  • Add the sifted flour, baking powder, salt and lemon juice and mix until you get a smooth and homogeneous dough.

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

  • Form balls and place them on the tray well spaced from each other (the cookies will grow during baking).

    Bake in the oven at 350 degrees for about 15 minutes.

  • Remove from oven and let cool.

    Dust with powdered sugar.

Storage and tips …

Store covered by a cake cover or in a tin box.

Consume within 15 days.
