The cod with potatoes in white sauce is a very simple and easy recipe to prepare. It can be made with desalted cod as proposed in the recipe or with salted cod, which will require a different procedure as it needs to be soaked and desalted.

Ingredients
- 28 oz desalted cod
- 1 clove garlic
- 1/4 cup extra virgin olive oil
- 1.3 lbs potatoes
- 2 cups vegetable broth
- to taste salt
- to taste pepper
- to taste flour

Steps
Rinse the cod well under running water. Dry it with kitchen paper and place it on a cutting board. Using a sharp knife, remove the skin. Cut into 2×2 inch pieces and remove any bones.
Lightly flour the cod, shaking it a bit to remove the excess.
Peel the potatoes and cut them into 1.25×1.25 inch cubes.
In a pan, add the oil with the peeled garlic clove and place on the heat.
Add the cod and brown it over medium heat.
Add the potatoes and half of the vegetable broth.
Cover with a lid and cook for 30 minutes.
Check occasionally to ensure it doesn’t dry out too much and add more broth if needed.
Shake the pan occasionally to prevent the potatoes from sticking to the bottom.
Chop the parsley and set aside.
Adjust with salt and pepper.
Garnish with parsley and serve.
Advice
Add salt only at the end, as the cod will release more salt during cooking.
You can add flavor with fresh rosemary.
To make it lighter, you can cook with water instead of vegetable broth.
It can be stored in the fridge for 2 days.
