Pan-Seared Tomatoes, Shrimp, and Chorizo

This recipe with pan-seared tomatoes, shrimp, and chorizo is a simple, quick dish that can also be a warm appetizer, perhaps for the upcoming end-of-year holidays.

The chorizo is a sausage made with pork and beef, flavored with spices such as paprika, typical of the Iberian Peninsula.

It’s quite caloric and not always available at the supermarket, but we can substitute it with a spicy Neapolitan salami to give great flavor to the preparation.

Ingredients for PAN-SEARED TOMATOES, SHRIMP, AND CHORIZO

  • 12 oz shrimp (also frozen)
  • 5 oz chorizo
  • 10 cherry tomatoes (halved)
  • 1 red onion
  • 1 clove garlic
  • 2 pinches chili pepper
  • 2 pinches sweet paprika
  • 2 cups vegetable broth
  • 2 tbsp extra virgin olive oil
  • to taste salt
  • to taste chopped parsley

FOR THE PREPARATION OF PAN-SEARED TOMATOES, SHRIMP, AND CHORIZO

  • Heat the extra virgin olive oil in a saucepan and add the shrimp, removing them as soon as they change color and arranging them on a plate.

  • In the same pan, add the garlic clove with the peeled and chopped onion and let it stew for 5/6 minutes.

  • Add the cherry tomatoes, vegetable broth, a pinch of salt and pepper, and spices to taste.
    Now let it cook for about 8-10 minutes to thicken the sauce.

  • Add the shellfish, let it flavor for a few minutes, add fresh chopped parsley, and serve immediately!
