Strawberry Brick Cake (egg-free)
A delicious, fresh cake made without baking in just a few minutes. If you like strawberries, I highly recommend trying this cake! It’s the perfect dessert to bring if you’ve been invited to dinner or if you have guests, and it’s also perfect for Easter and Easter Monday! I chose to make the base of this cake with cookies so it can be enjoyed by those who are intolerant or for various reasons cannot eat eggs!

- 7 oz strawberries
- 1/4 cup sugar
- Half lemon
- 1 cup whipping cream
- 4.2 oz mascarpone
- 7 oz cookies
- 1/3 cup sugar
- Strawberry juice

Strawberry Preparation:
Clean and cut the strawberries, add the sugar, lemon juice, and cook for about 10 minutes, stirring occasionally. Once ready, let them cool!
Cream Preparation:
Put the mascarpone, cream, and sugar and whip them. Mix the obtained cream with the previously prepared strawberry mixture.
Assembly:
Place a layer of cookies soaked in strawberry juice,
add a layer of cream, and continue alternating the layers. Cover the entire surface with the remaining cream. Decorate as desired with fresh strawberries.
