How to Prepare Seafood Pasta Sauce with Mantis Shrimp
To prepare this delicious sauce, you need to not only clean and wash the mantis shrimp but also remove all the protruding parts that make them almost impossible to eat.
With a pair of sharp scissors, remove the head, and trim it by removing the antennas and eyes.
Also, cut off the large “legs” at the back, the protruding parts all around the mantis shrimp, and finally, trim the tail and remove all the central legs.
At this point, rinse them under running water, let them drain well, and pat them dry with paper towels to remove as much water as possible.
Still using scissors, cut them into pieces of about 1 inch and place them in a bowl.
Wash the cherry tomatoes, dry them, cut them into pieces, and place them on a plate.
Pour the extra virgin olive oil into a large, high-sided non-stick pan, and sauté the mantis shrimp.
After a minute or two, add the cherry tomatoes, toss, mix well, and let cook for about 10 to 15 minutes, or until the tomatoes have wilted.
While waiting for the sauce to cook, you can simultaneously start boiling water for the pasta.
