Notes and Tips
If kneading by hand, you can prepare the shortcrust using the classic sablé method with cold butter. Preheat the oven in advance to bake the cookies while they are still cold, so they will hold their shape better.
You can fill them with jam of your choice; I used raspberry jam for its red color. Besides the pistachio cream, you can also use hazelnut cream.
