Greek-Style Mushrooms

A simple recipe for an aromatic side dish with these Greek-style champignon mushrooms with thyme and bay leaves and a few coriander seeds!

Champignons are widely used in budget-friendly cooking and pair well with many dishes, always being appreciated by almost all diners.

The champignon mushrooms have a high water percentage exceeding 90% while the protein content ranges from 2% in fresh mushrooms to over 30% in dried packaged ones.

The champignon mushrooms pair greatly with fish, for example with some slices of cod in sauce but also with a nice piece of swordfish and/or salmon and shrimp!

And if we really want to go overboard, we pair the champignons with oysters, shellfish I have never eaten and probably never will!

Ingredients for GREEK-STYLE MUSHROOMS RECIPE

  • 9 oz champignon mushrooms
  • 1 fresh green onion
  • 2 tbsps extra virgin olive oil
  • 1 leaf bay leaf
  • 1 pinch thyme
  • 1 tsp tomato paste
  • 1 cup water
  • a few coriander (whole seeds for me)
  • to taste salt
  • to taste pepper

FOR THE PREPARATION OF THE GREEK-STYLE MUSHROOMS RECIPE

  • I start by removing/peeling if I may say the outer skin… I always do this first step if the champignon mushrooms are plump, if they are small, I avoid it… but you do as you are used to and as you like!

  • In a pan, I put the extra virgin olive oil and when it sizzles, I add part of the washed and finely chopped green onion.

    I add a tablespoon of water and continue until the onion is tender and almost transparent.

  • I add the whole champignons if they are small, or halved if they are larger.

    I also add the bay leaf, thyme, tomato paste and the cup of water, cooking for about 25/30 minutes.

    Season with salt and pepper and bring to the table!

    These mushrooms could also be used to top a bruschetta
