  • 7 oz red onions
  • 1.25 oz sugar
  • 1 pinch salt
  • 1 tbsp balsamic vinegar
  • 3.5 oz water
  • 3.5 oz smoked swordfish
  • 2 slices white sandwich bread

How to prepare Crostini with Smoked Swordfish and Caramelized Onions

Remove the skin from the onion, finely slice it into rings, and place it in a non-stick pan with the water and sugar.

Cook on low heat until the water has evaporated and the onion has softened.

At this point, add the salt, balsamic vinegar, stir and let it cook for about 10/15 minutes, or until the onion has nicely combined with the sugar and become creamy.

Turn off the heat, pour it into a glass jar or a bowl with an airtight lid or plastic wrap, and let it cool, then place it in the fridge to chill.

Cut the sandwich bread slices in half, and toast them in a pan or oven for just a few minutes.

Now that all the ingredients are ready, you can assemble your crostini.

Spread the caramelized onions on each slice of toasted bread, and place the smoked swordfish slices right on top.

Serve your Crostini with Smoked Swordfish and Caramelized Onions, immediately, fresh, but not before sprinkling with fresh mint leaves or parsley, and drizzling with extra virgin olive oil if desired.

Tips, Variations, and Storage

Assembled crostini do not keep well if prepared in advance, as the bread would become too soft due to the onion’s liquids.
