Beet Hummus is a colorful and inviting variation of classic hummus, perfect for appetizers and aperitifs. A recipe that is prepared in just a few minutes by combining all the ingredients of hummus to which we add beets that will not only give a pleasantly sweet and fresh flavor, but above all a fuchsia color that will surprise everyone, in full “Barbie hummus” style! The result will be chickpea hummus to savor first with your eyes and then with your palate!
The recipe is very simple: we pour all the ingredients into a food processor or blender and blend until we obtain a smooth hummus. Pour into a dish and garnish with oil, spices, herbs, and crispy chickpeas.
You can use either pre-cooked canned chickpeas or cook them at home starting from dried chickpeas that, of course, should be soaked for at least one night so they have time to rehydrate, and then cook them the next day. The same goes for the beets, you can use either the pre-cooked ones found vacuum-packed in any supermarket or cook them at home by boiling or roasting them. As for the rest of the ingredients, you can add them according to your preferences, for example, there are those who do not like garlic and prefer to omit it, or prefer to add less or more lemon juice, or cannot find tahini which in any case we can make at home.
Once ready, we just have to enjoy the beet hummus. The options for this versatile sauce are many: we can use it as a sauce for a healthy and tasty appetizer or aperitif in which to dip seasonal vegetables or spread on slices of bread to create colorful bruschettas to complete with other seasonal vegetables, or to spread on crackers, crostini, wasa slices, to accompany pita, naan bread, buckwheat crepes, or to create delicious wraps, sandwiches, and super colorful tacos, and even for dressing pasta, rice, grains, and salads. However you choose to try it, you will surely fall in love with this beet hummus not only because of its amazing color but also because it is made in less than 5 minutes, with very few ingredients, and the result is a fresh, healthy, and delicious sauce!

Steps to make Beet Hummus
Prepare the beet hummus by pouring chickpeas, beets, garlic clove, lemon juice, tahini sauce, cumin, and paprika, olive oil, salt and a few ice cubes of cold water into a food processor or blender.
Run the food processor or blender blending all the ingredients until you obtain a smooth hummus.
Pour into a serving plate and garnish with olive oil, spices, herbs like mint or cilantro and if you like, with crispy chickpeas.
Serve immediately or store the beet hummus in the fridge until ready to serve.

Better canned or dried chickpeas?
Both are valid alternatives. For super-fast hummus, of course, we recommend using pre-cooked canned chickpeas that just need to be rinsed well, dried, and then used. Instead, if you have more time available, you can use dried chickpeas by soaking them overnight in cold water and then cooking them the next day.
Better cooked or raw beets?
To save time, you can use pre-cooked beets that you can find vacuum-packed in any supermarket. If instead, you use raw beets, you will necessarily have to cook them first by boiling them or in the oven
What can be used instead of tahini?
Tahini is a sesame seed paste that is now easily found in many supermarkets or online. You can also make it at home starting from toasted sesame seeds and using a high-speed blender as we explain in this article. However, if you don’t like the taste of sesame seeds or can’t use them, you can opt for another nut butter such as peanut butter.
