I searched for a long time for the recipe of Gaufres de Liège, the original Belgian waffles, which I had the fortune to taste during a trip many years ago.
The recipe, after extensive research online, I found on the wonderful French blog Paprikas. I made them without the filling with Nutella, following the traditional recipe, but next time I will try them following Nadia’s recipe. In this case, a light dusting of powdered sugar will suffice, making breakfast or a super tasty snack ready.

Ingredients for Gaufres de Liège
- 3 cups Flour
- 0.4 cups Milk
- 1 tbsp Dry yeast
- 2 Eggs
- 0.75 cups Vanilla powdered sugar
- 0.7 cups Butter
- 4.2 oz Sugar pearls (or pearl sugar)
- 1 pinch Salt
Preparation of Gaufres de Liège
Warm the milk and butter in a saucepan until the butter is melted. Set aside and let it cool slightly.
In a bowl, place the flour, a pinch of salt, the vanilla sugar, and the yeast dissolved in a bit of warm milk taken from the total. Add the beaten eggs and the butter melted in the milk.
Cover it with a clean cloth and let it rest for an hour in a sheltered place.
After the resting time, heat the waffle maker.
Mix all ingredients and knead for 5 minutes.
Add the sugar pearls to the dough and mix gently.Take a small amount of dough from the bowl, the size of an egg, flatten it slightly, and place it directly on the hot plate, lower the lid, and let the Gaufres de Liège cook until golden brown. The browning will be quite dark because these waffles contain sugar pearls that caramelize during cooking. If you can find pearl sugar, this issue will be much lighter.
Serve immediately accompanied by ice cream, fresh cream, and fruit.
This type of waffle is also excellent at room temperature without any topping.
