Ingredients
- 4 slices peppers
- 4 eggs
- 4 slices of cheese
- to taste salt
- to taste extra virgin olive oil

Steps
Wash the peppers and cut them into slices about 1.5 centimeters (about 0.6 inches) thick.
Remove the seeds and filaments.Heat a non-stick frying pan with a little extra virgin olive oil or butter.
Place the pepper slices in the pan and cook for about 2-3 minutes per side, until they are slightly softened and golden.
Break an egg into each pepper slice and salt to taste.
Cover the pan with a lid and cook on medium-low heat for about 3-5 minutes or until the eggs are cooked to your liking.
At this point, place a slice of cheese on each pepper slice.
Cover with a lid for about a minute until the cheese is melted.
