Baked Spinach Omelette

A tasty and easy Baked Spinach Omelette, a way to avoid frying, lighten the cooking, and not have to flip it. To soften the omelette, I added ricotta and milk, and for flavor, cooked ham. Ingredients

  • 4 eggs
  • 3.5 oz ricotta
  • 1.75 oz cooked ham (diced)
  • 1.75 oz Parmigiano Reggiano DOP (grated)
  • 2 tbsps milk
  • 0.5 tsp fine salt
  • 1 tbsp extra virgin olive oil

Steps

  • Wash the spinach very well in cold water, and once the water is clean, drain and put them to cook in a pan with a lid without adding anything (they will release their water). Meanwhile, crack the eggs into a bowl, add the Parmesan, and lightly beat them with a fork. Add the ricotta and diced cooked ham and mix.

  • Add the cold chopped spinach, mix, salt, and pour in the milk to make the mixture softer. Line the baking dish with parchment paper (wet and squeezed). Grease the bottom and sides with a tablespoon of oil, pour in the mixture and level it. Set the static oven to 392-437 degrees Fahrenheit, and once it reaches temperature, bake in the middle. Cook the omelette for 40 minutes and once removed from the oven, wait 10 minutes before placing it on a plate to avoid breaking it.
