Gluten Free Tart

Gluten Free Tart, making a gluten-free tart is not easy at all, working with buckwheat which, like all gluten-free flours, is difficult to “bind” to the rest of the ingredients. I give it a try! I assure you it’s worth it, I used elderberry flower and fruit jam that a Sicilian company produces masterfully, and it’s not just because I’m Sicilian, if a product is good why not recognize it? It’s also good with blueberry jam, plum… make it, really good, unique taste not very sweet but no less good than double zero flour tarts. Ingredients

  • 3 cups gluten-free buckwheat flour
  • 2/3 cup sugar
  • 1 cup gluten-free coconut flour
  • 2 eggs
  • 1/2 cup seed oil
  • 1 lemon zest
  • 1 cup jam
  • 1 packet vanillin

Preparation

  • Start by combining the buckwheat flour with the sugar, coconut flour, vanillin, and lemon zest. Mix the ingredients well and add one egg, the oil, and the other egg. Quickly blend all the ingredients together.

  • Let it rest in the fridge for half an hour. Using parchment paper and a rolling pin, gently roll out the dough, use a 9-inch baking pan.

  • Fill with your choice of jam, for my gluten-free tart I chose elderberry flower and fruit jam.

  • Bake for 35 minutes at 356°F

  • Ready! Enjoy your gluten-free tart.
