Notes and Variations
You can use black, Taggiasca, or Greek olives instead of green ones. If using olives in oil, dry them well before adding them to the feta.
Do not add salt to the filling, both feta and olives are already quite salty.
If necessary, you can fill the pastry in advance and store the rolls in the fridge. Then slice and bake the pastries when needed.
