Ingredients
- 1 lb Mantovana pumpkin (cleaned)
- 2 potatoes (medium)
- 1 cup rice
- 1 shallot
- 1 broth cube (vegetable)
- 3 tbsp extra virgin olive oil
- to taste salt
- to taste black pepper
- 6 cups warm water

Steps
Cut the pumpkin into small cubes, removing the skin and seeds. Make sure you have about 1 lb of pumpkin cubes.
Peel and finely slice the shallot.
Peel the potatoes and cut them into cubes.
In a large pot, heat the extra virgin olive oil over medium heat then sauté the shallot.
Add the pumpkin and potatoes and sauté for a few minutes, stirring.
Add the broth cube, cover the vegetables with warm water, and mix with a wooden spoon.
Cook covered for about 15/20 minutes.
At this point, add the rice and bring to a boil.
Let the soup cook over medium-low heat, stirring occasionally, until the rice is cooked and the pumpkin is soft. If necessary, add more water.
