Savory Cream with Olives, Ricotta, and Basil

To say that the savory cream with olives, ricotta, and basil is super quick is an understatement: it’s ideal for spreading on crostini for a quick appetizer, possibly served with assorted savory snacks, margherita crostone wedges, individual portions of focaccia or rustic pastries, quick puff pastries or a nice tray of sandwiches with toast bread!

INGREDIENTS FOR SAVORY CREAM WITH OLIVES, RICOTTA, AND BASIL

  • 5.3 oz green olives (pitted)
  • 7 oz ricotta
  • 1/4 clove garlic (just a pinch minced)
  • to taste basil
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

FOR THE PREPARATION OF SAVORY CREAM WITH OLIVES, RICOTTA, AND BASIL

  • quick tasty and creamy, so… let’s go!

    I wash the basil and pat dry with paper towels to remove most of the water.

    I blend in the mixer, finely chopping the garlic and basil.

    I also add the pitted green olives and run the blades again to get a fine and smooth mixture.

  • I add the ricotta and all that’s left is to mix everything well, seasoning with fine salt, extra virgin olive oil, and a small grind of white or black pepper to taste.

  • I cover the bowl where I put the ricotta and basil cream with plastic wrap and place everything in the fridge until it’s time to spread the savory basil cream on the crostini, preferably toasted so that the moisture of the cream stays longer on the surface, keeping the canapés from getting too soft!
