Notes and Variations
If you can’t find curry paste, you can substitute it with green curry powder. In this case, I recommend adding the white part of the scallion to the vegetables, and some cumin seeds if you like.

The addition of chicken is optional; you can omit it and increase the quantities of the other ingredients if you want a vegetarian dish.
