Notes and Tips
Try to use a pumpkin with dry and firm flesh; in this case, I used a classic Delica pumpkin with green skin.
You can season your fritters with herbs and spices to taste. You can slightly increase the amount of Parmesan if you like.
If you have leftovers, you can store the fritters in the refrigerator and then heat them in the oven or on a non-stick pan without adding any fats.
