Ingredients to prepare the onion jam
- 1.1 lbs red Tropea onions
- 1.25 cups sugar
- 0.42 cup balsamic vinegar
- 4 tbsps wildflower honey
Tools to prepare the jam
- Kitchen scale
- High-sided saucepan
- 1 Mandoline slicer
- Food mill
- Immersion blender
Preparing the onion jam
Using the mandoline slicer, slice the onions directly into the high-sided saucepan.
Add the balsamic vinegar and let it simmer on low heat for 10 minutes.
As soon as the onions are soft, add the honey.
Add the sugar and let it cook for 45 minutes on low heat. After this time, your jam is ready to be jarred.
Personally, I prefer my Tropea onion jam smooth, so besides using the food mill, I also use the immersion blender.

For extra safety, I boil the jars with the onion jam in a pot with cold water for 30 minutes upside down, and after that time, I let them cool in the pot.
