The Friselle with Marinated Zucchini and Grilled Peaches, make for an exceptional and refreshingly unique dish. Delightful when consumed for lunch on the hottest days of the year. Very often, at the last moment, I also season them with a drizzle of balsamic vinegar or lemon juice, because I find it completes the recipe. If you don’t like either, no problem, because they are delicious as they are. If you don’t like chives, you can use fresh mint leaves, fresh thyme, rosemary, or even basil, whatever aromatic herbs you prefer.

Ingredients
- 4 friselle
- 3 Roman zucchini
- 2 peaches
- 3.5 oz primo sale cheese
- to taste pink pepper
- to taste salt
- to taste chives
Tools
- 1 Bowl
- 1 Peeler
- 1 Tray
How to prepare Friselle with Marinated Zucchini and Grilled Peaches
Wash the zucchini thoroughly, slice them thinly with a peeler, and place them in a bowl.
Season them with extra virgin olive oil, salt, pink pepper, mix, and let them marinate for about half an hour in the refrigerator.
After washing and drying the peaches, remove the pit but keep the skin and slice them about 0.4 inches thick.
Grill them for a few minutes in a griddle and let them cool on a small plate.
In the meantime, wash, dry, and finely chop the chives with a knife because you’ll need them at the end of the recipe.
Arrange the friselle on a serving plate, moisten them with a little water and then with extra virgin olive oil, brushing them well over the entire surface.
At this point, spread the marinated zucchini on the bread, pieces of cheese, a bit more pink pepper, and the chives.
Serve your Friselle with Marinated Zucchini and Grilled Peaches, drizzling them again with a bit of extra virgin olive oil and serve immediately.
Tips, Variations, and Storage
The friselle with the zucchini already assembled cannot be kept for long even in the refrigerator because the bread would become too soggy, inedible.
However, if you want to prepare ahead of time, I recommend preparing all the ingredients and assembling them at the last moment.
