FAQ (Questions and Answers)

  • What’s the difference between stracciatella and burrata?

These two cheeses of Apulian origin are very similar yet different. In fact, burrata can be defined as a casing of spun dough containing stracciatella inside. Stracciatella, in turn, consists of shredded mozzarella mixed with very fresh cream. Consequently, burrata is usually enjoyed plain just with good extra virgin olive oil, bread, and maybe to accompany a tomato side. Stracciatella is very versatile and can be the ingredient of many dishes like the pasta we propose today.

  • Is it better to use long pasta or short pasta?

The choice of the best format is simply the one you prefer. You can choose either spaghetti, linguine, or scialatielli as long pasta formats, or short pasta like penne, fusilli, orecchiette, or paccheri.

  • Which cherry tomatoes to use for preparing this pasta with stracciatella and cherry tomatoes?

Both datterini or cherry tomatoes are suitable, or alternatively only yellow cherry tomatoes or a mix of red and yellow cherry tomatoes.
