Fake broccoli pizza cooked in an air fryer. Very tasty, delicate, and light, very original, different from usual, let’s try to make it with few and simple ingredients… you’ll fall in love with it.
Don’t have an air fryer? It cooks just fine in the oven too.
Are you a pizza lover but can’t indulge right now because you’re on a diet, or simply being more conscious about your eating and want to stay light?
The appearance is that of a regular pizza, but the base is not the classic one at all.
In fact, instead of the bread dough made with flour and yeast, there is absolutely no flour and yeast in this pizza. The base is made with blended broccoli mixed with eggs and grated cheese.
We topped it very simply with tomato sauce, mozzarella, and basil leaves.
But of course, we can enrich the pizza in many ways, for example by adding olives, capers, garlic, or vegetables like zucchini, eggplants, peppers, broccoli, or any other ingredient of our choice!
Great also with cooked ham and mushrooms.

Ingredients
Fake Broccoli Pizza
- 1.1 lbs broccoli (weight when cleaned)
- 2 eggs (use 3 if they are small)
- 2 tbsps grated Parmesan
- 2 tbsps breadcrumbs
- to taste salt
- to taste tomato sauce
- to taste extra virgin olive oil
- salt
- 7 oz fior di latte (or light mozzarella)
- leaves basil

Steps
Fake Broccoli Pizza
To prepare the fake broccoli pizza, let’s assume you already have boiled broccoli.
Otherwise, clean the broccoli by washing the broccoli florets thoroughly under running water.
You can also use the stem, just peel it with a vegetable peeler to remove the tougher outer part and steam them for 10 minutes, then let cool.
(Steam them so they absorb less water).
Dry them well by patting them with kitchen paper and transfer them into the bowl of a food processor.
Blend in pulses until reduced to fine crumbs.
Transfer everything to a bowl, add the eggs, a pinch of salt.
Also add the grated Parmesan and breadcrumbs.
Mix everything together and pour the obtained mixture onto a baking tray lined with parchment paper, trying to form a disc using a spatula.
Cook in air fryer for 10 minutes.
Then take your broccoli pizza out of the oven and top it with tomato sauce, spreading it with a spoon as you would with a regular pizza.
Complete with the fior di latte cut into small cubes.
Put back into the air fryer until the mozzarella is well melted.
Remove from the oven, let it cool slightly before slicing, and serve with a drizzle of raw oil and fresh basil leaves if you like.

Tips
Don’t have an air fryer? You can cook it in a preheated oven at 392°F for 15 minutes. Then take your broccoli pizza out of the oven and top it with tomato sauce, spreading it with a spoon as you would with a regular pizza, and continue with the mozzarella. Put back in the oven for another 10 minutes or until the mozzarella is well melted.
You can store the fake broccoli pizza in the fridge for 2-3 days. I do not recommend freezing it.
