Chocolate Salami without Eggs

The eggless chocolate salami is a classic, timeless, and incredibly beloved dessert that combines the simplicity of preparation with a rich and enveloping taste. This version, in particular, is a perfect variant for those looking for a delicious dessert but need to avoid eggs, without sacrificing its unmistakable texture and intense flavor.
With a mix of crunchy cookies, dark cocoa, and melted butter, this “no-bake salami” is made in just a few minutes and requires no oven, making it ideal for sudden sweet cravings or a party with friends. Its characteristic shape makes it fun to serve and see, while its melt-in-the-mouth texture makes it an irresistible experience. It’s a dessert that brings back the flavors of the past, capable of captivating both young and old. As a good Tarantine, I made a variation, replacing milk with coffee and a bit of Borsci S. Marzano liqueur and adding hazelnut crumbs

Ingredients

  • 8.8 oz dry biscuits
  • 5.3 oz dark chocolate
  • 1/4 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup coffee
  • 2 tbsps liqueur (San Marzano or rum)
  • 7 tbsps butter (melted)
  • to taste powdered sugar (for decoration)
  • 3 tbsps hazelnuts (crumbs)

Tools

  • Parchment Paper
  • 1 Pot bain-marie

Steps

  • The first thing to do is to coarsely crumble the biscuits.

  • Melt the dark chocolate in a bain-marie or in the microwave if you prefer.

  • Add the melted butter to the chocolate.

  • Add the coffee and San Marzano liqueur. If you prefer, you can also replace the coffee with milk in the same amount, but I assure you the taste changes significantly.

  • Add the sugar.

  • Add the unsweetened cocoa.

  • Add the cookies.

  • Add the hazelnut crumbs and mix well until everything is combined.

  • Gently pour the mixture onto a large sheet of parchment paper. Use a spatula to form a cylinder.

  • Wrap it like a candy.

  • Tie the ends with string and let it set in the fridge for at least 3 hours. It’s best if prepared in the evening and left to set overnight.

  • Massage the salami with plenty of powdered sugar.

  • Slice and serve.

Hello everyone and welcome to my blog. My name is Francesca, a true native of Taranto. I love cooking desserts and traditional dishes, and my inspiration comes from the women in my family. Photography, for me, is about capturing the moment… in a shot, you hold your breath and then start again, savoring every little detail as you develop it. Why Ethra? She was the wife of Phalanthus, the founder of Taranto, the Spartan city. I'd like to take this opportunity to thank you all… there are already so many of you following me. Thank you, thank you, thank you!
