No rising required in the preparation of these homemade breadsticks with mixed seeds that are super easy to make and really, really good. The only downside is that this recipe yields only about ten. So, they are baked and practically disappear in front of your eyes. They are perfect bread substitutes but also excellent snacks to munch on at any time of the day. Oh, and I forgot… they are crumbly and crunchy. I highly recommend trying them and maybe even doubling the recipe; I am sure you won’t regret it. Want to bet?

Ingredients for Homemade Breadsticks with Mixed Seeds
- 3/4 cup type 1 flour
- 1/3 cup re-milled durum wheat semolina
- 1/2 cup oat flakes
- 1/8 cup sunflower seeds
- 1/8 cup pumpkin seeds
- 1 tbsp flax seeds
- rosemary (a few needles)
- 1/3 cup water
- 1 tsp instant yeast for savory recipes
- 1/4 cup extra virgin olive oil
- 1 tbsp salt

I made the dough for these homemade breadsticks with a Thermomix, but any other mixer will do. They can also be made by hand, but a chopper will still be necessary to grind the seeds.

- 1 Baking tray
Preparation of Homemade Breadsticks with Mixed Seeds
Place the oat flakes, sunflower seeds, pumpkin seeds, flax seeds, and a few rosemary needles in the bowl and grind until you get a sort of flour (with the Thermomix: 20 seconds at speed 6). Don’t worry if some flax seeds remain whole.
Add the re-milled semolina and type 1 flour and mix: 10 seconds at speed 4.
Then, add the water and one teaspoon of instant yeast for savory recipes and knead: one minute at Knead speed.
At this point, add the oil and salt and knead again until all the ingredients are perfectly combined: another minute at Knead speed.
Transfer the dough onto the work surface, knead it for a few moments with your hands, shape it into a ball, and let it rest at room temperature for fifteen minutes. I put it under a bowl.
After the resting time, flatten the ball into a block and cut it into about ten pieces.
Roll each piece with your hands on the work surface, forming a breadstick. Try to make them all the same size and length. The dough is easily moldable, allowing you to remove any excess part of a breadstick and use it to increase the quantity of another.
Place the homemade breadsticks with mixed seeds on a baking tray lined with parchment paper as you go.
Bake them in a fan oven, preheated to 392°F (200°C) for 15/20 minutes. Remove from the oven and let them cool slightly (if you can) before enjoying. Enjoy! Paola
