After subscribing to Cucina naturale I have been experimenting with many recipes using less refined ingredients and less sugar and among these recipes today I tried to make the CHOCOLATE APPLE LOAF, a soft cake based on a puree of blended apples and a small amount of brown sugar in the batter.
The low amount of sugar is balanced by 50/60 grams of dark chocolate added and even though it is not very sweet, it is enjoyable and suitable for those looking for a lower-calorie diet.
If you want a more tart flavor instead of using Golden apples as I did, use Granny Smith apples which definitely have a livelier taste.
THE APPLE LOAF IS A VEGETARIAN DISH, DAIRY-FREE, GLUTEN-FREE WITH A MEDIUM GLYCEMIC IMPACT, made with rice flour, corn starch and coconut milk and very soft!
THE CHOCOLATE APPLE LOAF KEEPS FOR A COUPLE OF DAYS COVERED WITH PLASTIC WRAP AT ROOM TEMPERATURE.
The original recipe for the APPLE LOAF with chocolate chips states serves 8 and 280 calories per person …I think the portions are many more than 8!

Ingredients for CHOCOLATE APPLE LOAF
- 2 apples
- 7 oz rice flour
- 1.8 oz cornstarch
- 2.1 oz brown sugar
- 3 eggs (medium)
- 1 lemon (small, juice only for the apples)
- 1.8 oz chocolate chips (or chopped dark chocolate pieces)
- 4 tsp baking powder (instant)
- 1/3 cup extra virgin olive oil (I preferred to use corn seed oil + extra for the pan)
- 3.5 tbsp coconut milk
Tools for CHOCOLATE APPLE LOAF
silicone bundt pan — for me diameter 10 1/4 in (26 cm)

A light cake — I would say a cake for a vegetarian, gluten-free diet…
Wash and peel the apples, remove the core and cut them into large chunks.
Blend them into a puree with the lemon juice, then add the eggs, mixing carefully with a whisk.
Continue by adding the brown sugar, the oil and the coconut milk.
Now sift together the rice flour with the cornstarch and the baking powder.
Mix everything and fold in the chocolate chips at the end — I didn’t have chips so I chopped up some dark chocolate which is always available at my house!Pour the batter into the previously oiled pan (I chose a silicone pan lined with a pastry coating). After leveling the batter well, I baked it at 170°C in conventional mode for about 45 minutes — which is about 338°F (conventional oven) — but as always check doneness with the toothpick test!
Once baked and unmolded, let the CHOCOLATE APPLE LOAF cool and dust it with powdered sugar.
THE CHOCOLATE APPLE LOAF is a light, vegetarian dessert, dairy-free and gluten-free, soft and delicate!
